Try this take on delicious cornbread with a sweet potato twist at your Thanksgiving this year!

INGREDIENTS:

  • 1 cup all-purpose flour
  • 2 cups cornmeal
  • 1/4 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 4 eggs
  • 1 1/2 cups buttermilk
  • 8 tablespoons (1 stick) butter, melted
  • 1 cup mashed sweet potatoes
  • 1/4 cup honey
  • Cooking spray

SUPPLIES:

  • Bread Loaf Pan ( 9 x 5 )

INSTRUCTIONS:

  1. Turn on oven to BAKE at 400 degrees
  2. Put all dry ingredients (flour, cornmeal, brown sugar, baking powder, baking soda, salt, pumpkin pie spice)  in a bowl and mix thoroughly
  3. Pour eggs, buttermilk, and melted butter in bowl and mix again
  4. Add sweet potatoes and honey, then mix again
  5. Coat bread loaf pan with cooking spray
  6. Pour cornbread mixture into bread loaf pan
  7. Bake at 400 degrees for 30 minutes, or until a toothpick comes out from the middle clean
  8. Serve to your guests, garnish with a slice of butter
